I am looking for some yummy, low calorie ways to eat eggs (i usually use just the whites)! Preferably under 250 calorie per serving recipes!
Thanks!

  • You can add turkey sausage also, and baby spinach works better

Mushrooms and basil egg omelette. I use smart balance instead of butter or oil.

Egg white omellette. Loaded up with all kinds of veggies; onions, mushrooms, green pepper, tomato. If you use just the egg whites you can add some shredded cheddar and still be under 250 calories.

omelet with some baby belle mushrooms, fresh spinach and some fat free feta. I make it with one egg and 1 tbsp of fat free milk, but I'm sure it will be great with egg whites. It's probably like 100 calories.

I found a really yummy one on here. Line a muffin tray with a slice of ham, beat an egg and pour in the muffin tray and top with some grated cheese and put in the oven for about 15 minutes. These are so yummy and about 100 cals each depending on the ham.

The egg makes the whole thing rise so they actually look like muffins when they come out of the oven. I serve mine with slimming world chips.

Egg White Omelets! You can put whatever you want in them! I usually do tomatoes and feta cheese. Yummy.

    Also this is really good!

    2.5c liquid egg white
    1/2 cup 15% feta cheese
1-1/5c 19% mozza or other lf cheese
Diced veggies, I used tomato and peppers
You could add some sort of meat as well.

In a muffin tin (I used a silicone one with pam spray, if using metal then reduce amount of egg by about 3/4 cup.

Layer veggies and cheese equaly among muffin tin, then pour eggs evenly into each.
Bake at 375 for about 20 minutes or until toothpick comes out clean.

baked custard! Nothing like having dessert first, and it makes a really yummy hot breakfast. You can make it with coconut milk, regular cream, or almond milk. Tasty, tasty!

bag them in twos and they are so easy to take to work. Sometimes I used crumbled turkey sausage. I Iike a little ketchup on mine too.
