freezing meals for the week question

since my kids are on spring break, i KNOW my energy will be drained..i think i am going to make a few dinners, and freeze them for later on this week, or next..do chicken enchiladas freeze well, and still taste good ?

    I just made chicken enchilada's last week and froze them. Mine turned out great!

    Yes... I make chicken enchiladas in 4 or 5 dishes and freeze all but one. That way I only have the mess once. I freeze them before cooking. It takes a while to thaw, but if you took them out in the morning, they would be ready to bake in the evening.

    Maybe I'm wrong, but I'd think the wrap on the enchilda would get soggy when reheated. I'd prob mke them, but not fill them until your ready to eat that night. BTW I LOVE enchlidas! :)

    Some people like them, some people think they are soggy. I haven't frozen them in a while, so I can't remember. I think I have heard that they are less soggy if you use the corn tortillas.

    Another option is making the mexican lasagna I made for dinner today. I used lasagna noodles instead of tortillas.
