Lunch

Anyone know of any good lunches that can be made at home easily without cooking? like any sandwiches or anything at all. but NO CHEESE IN THEM PLEASE. I'm lactose and tolarate and get sick if I eat too much cheese so i just dont eat it at all.

    wheat pita pocket. Put hummus in there if you like it along with veggies. A splash of low fat salad dressing and you're good to go. Have yogurt on the side or fruit.

    yesterday I had a Thomas's thin bagel with a chicken breast sliced on it and covered it with 100 calorie pack Wholly Guacamole and some raw vidalia onion, O M G was that good!

    You could always make several servings of your favorite dish (mine is chicken stir fry), and package them in individual portions so they're quick and easy to reheat for lunch. Otherwise, I like to do a quick soup and/or salad when I'm home for lunch.

    I love hummus toooo much...once I start eating it I never want to stop. I chose one protein like that a day, either almonds, PB or hummus....love it.

    Yesterday I had a turkey sandwhich on whole wheat bread. Turkey, tomatoes, lettuce, olive oil mayo (I put cheese on mine but you can skip that).

    Today I'm having this tuna spinach stuff that I got from one of the members here - OMG it's amazing! Here's the recipe:

    1 can of tuna packed in water
    1/2 cup avocado cubed
    1 cup cucumber
    1 cup orange bell pepper
    1 cup spinach
    a little salt and pepper

    Mix and eat. I use a package of low-sodium white albacore tuna and 2 tbsp of marie's all natural italian vinagrett dressing. SO GOOD!
