Does anyone have a salsa recipe they would like to share? I'm trying to cut back on sodium, and jarred salsa has SO much in it that I don't even want to buy it anymore. Thanks!

    I've got one:

1 can or organic black beans (drained)
1 can of chopped tomatoes (drained)
1 can of organic white or yellow corn (drained)
Chop some onion and the hot pepper of your choice
Mix with salt, pepper, and the juice of one lime. Enjoy!

yep, I make one every week for my salads.

    1 red bell pepper
    4 - 5 medium tomatoes (i like the ones on a vine)
2 jalapeno peppers (seeded if you don't like the heat)
    cup of cilantro
    dash of garlic powder
    3/4 cup of lime juice

you can add onion or real garlic (I eat my salads at work and don't want to deal with onion breath)

Put everything through a food processor, mix. let it sit in a fridge for a couple of hours for the flavors to mingle.

    Enjoy!

I have the honor of being married to a Mexican - and his mother can cook! (Part of the reason for being on MFP) So here's how you make it:

28 oz can of pealed, whole tomatoes
fresh garlic (2 to as many as you like mashed/ground with a bit of water to release the goodness!)
fresh cilantro (about a small handful of the leaves)
fresh roasted green chilies - diced in a can is fine too
chopped green onions - a bunch is good or less depending on what you like
fresh roasted jalapeno's or the canned are fine too
add additional sauces for more spice if needed (habenero, jalapeno, etc)

Blend it up in a blender. Salt to taste. As far as amounts, hook it up how you like it; I love all of these flavors and when they meld together it's wonderful (dragon breath, but wonderful!).
  • Thanks! Can't wait to make some of these.
