Meal Exchange Ideas

Hi y'all!
So, I'm in a meal exchange, where we basically cook freezer meals for each other. While I can't control what the other ladies make, i can control what I make, and I'm hoping to lead by example and move away from creamier heavier casseroles to healthier options. Does anyone have any casseroles they make that are particularly good? Pasta, mexican, chicken? Anything!?! I'm so excited to hear your ideas! Thanks for helping me cook healthier, not only for me, but my friends too!

    i have several, but im not sure what kind of numbers you are looking for in terms of fat or cals or sodium etc per serving
  • Have you looked at the hungry girl cookbook. She tends to use a lot of processed foods, but I have learned to work around those things to keep it healthier. Try it out, there a several yummy casseroles in there.

    it has a listing of 50 differant low calorie cassaroles you might like to try. some of them have ground beef. you could always substitute ground turkey or chicken to make it even more low calorie.

    My mum tried loads of these recipes from the channel 4 (UK) show "cook yourself thin" while she was on her diet, and with loads of success (in both weight-loss and in making good meals), but then she's an amazing cook.

    What about soups? You can make a huge, healhty meal with that. If not, there are some recipes on www.kalynskitchen.com that are healthy as well.

    I have a yummy recipe for tuna casserole. Except it omits the high calorie and high fat cream of mushroom soup. Its a weight watchers recipe. I have made it twice now and the whole family enjoys it!

    Ingredients
    12 oz uncooked egg noodles
    12 oz water-packed tuna fish, drained
    2 cup(s) button mushrooms, sliced
    1 cup(s) frozen green peas, thawed
    16 oz fat-free sour cream
    1/2 cup(s) fat-free mayonnaise
    2 tsp Dijon mustard
    2 tsp parsley, fresh, chopped
    1/2 tsp table salt, or more to taste
    1/4 tsp black pepper, or more to taste
    1/2 cup(s) shredded reduced-fat Monterey Jack cheese, or reduced-fat cheddar cheese

    Instructions
    Preheat oven to 350ºF.

    Cook noodles according to package directions without added fat or salt; drain and transfer to a large bowl. Fold in tuna, mushrooms and peas.

    Whisk sour cream, mayonnaise, mustard, parsley, salt and pepper together in a separate bowl; fold into noodle mixture. Transfer to a 4-quart casserole dish; top with cheese. Bake until top is golden and bubbly, about 30 minutes. Yields about 1 cup per serving.

    I have a recipe for low fat spaghetti and kills my craving for it. I use spaghetti squash, light Ragu (Tomato & Basil), and chicken spinach feta sausage. It's yummy and low fat! BONUS!!!:flowerforyou:
