Morrocan Chicken & Couscous Soup

Here is a fast, easy, low-cal soup with enough spice in it to not be boring. Experiment with proportions of veggies and spices till its just right for you. For those who don't like things quite as spicey, start by cutting the cumin in half.

2 Tablespoons vegetable oil
1 Onion, chopped
1 Pound Chicken, thighs or breasts, cubed
1/4 teaspoon cayenne
1 teaspoon cumin
1 3/4 teaspoon salt
1/4 teaspoon black pepper
1 sweet potato, chopped
1 zucchini, chopped
3/4 cup tomato puree (or small can of tomato paste)
1 quart water
2 cups chicken broth
1/2 cup couscous

In stew pot, cook onion at medium heat in oil until translucent (about 5 minutes). Up heat to high and add chicken, cayenne, cumin, salt, and pepper. Cook, stirring occasionally, for 2 minutes. Stir in sweet potato, zucchini, tomato puree, water and broth. Bring to boil then reduce heat and simmer until veggies are tender (about 10 min). Add couscous, simmer until couscous is thoroughly cooked and soup is of desired consistency (about 5-10 minutes).

If using tomato paste add a bit more chicken broth.

    I just made this and it was AMAZING! Thanks so much for the recipe! We like spicy so I added diced green chiles and threw in some carrots I had--it was awesome! Even my kids loved it! Thanks again!

    I made this and it was fantastic.... mine turned out very thick like runny couscous but hey it was nice like that anyways!
