Very much a non-spicy chili, more like a stew.

Dad’s Chili – Healthy Version

1 ½ lb ground turkey
1 medium onion
2 stalks celery
1 green pepper, diced

3 cans dark red kidney beans – low sodium
3 cans chopped tomatoes – no salt added
2 tablespoons chili powder
½ cup sugar (you could try a substitute but I haven’t)
1 tablespoon kosher salt

Brown the beef, onion, celery, and green pepper.
Put all ingredients into a large stew pot or a crock pot
Simmer a couple hours (stew pot)
… or slow-cook in a crock-pot low for 8 hours, or high for 4 hours

Other option is to use dried beans, but you need to soak them overnight first. Then you have NO sodium or other additives. You could also chop fresh tomatoes and get the same benefit. Canned veggies and beans have additives you may not want in your diet plan.

Makes about 14 one-cup servings on the last batch I checked.

    what? no garlic? Thanks for the recipe. i will give it a try and my apologies to emeril, but I will also kick it up a notch.

    Looks tasty. Like another poster said, tho...might have to spice it up...a pinch of cayenne for me. I like some heat.
