Best potato salad recipe!!!

I made this today and it is SO good it is pretty tangy but that is how I like my potato salad. If you prefer it sweeter add 2 tablespoons of splenda.
2 large egg(s), hard-boiled
1/2 tsp table salt
1/2 tsp black pepper, freshly ground
1/3 cup(s) red onion(s), chopped
1/2 cup Miracle Whip Lite
4 medium cooked red potatoes
3 Tbsp reduced-fat sour cream
1 Tbsp vinegar
2 tbsp of splenda (optional)
Instructions
Place diced potatoes in a large saucepan and cover with 2 inches of water; bring to a boil. Reduce heat and simmer, uncovered, until potatoes are fork-tender, about 7 to 9 minutes; drain and cool slightly.
Meanwhile, in a large bowl, using a fork, mash yolk from 1 egg with vinegar until smooth. Add miracle whip, sour cream, Splenda (optional), salt and pepper; stir until blended.
Add potatoes and onion to bowl; toss to mix and coat. Chop remaining egg white and egg; gently fold into potato salad. Cover and refrigerate until chilled. Yields about 1/2 cup per serving.
Total: 825 cal 29 carb 27 fat 15 protein 4 fiber
Per Serving (1/2 cup): 103 cal 4 carb 3 fat 2 protein 1 fiber
