Chicken idea to go with eggplant (aubergine) parmesan

Cooking eggplant parmesan, and want to do chicken to go with it (not in it). Any ideas what spices etc would go well with it all? We've got a pretty full herb and spice rack, some teriyaki sauce, honey, flour etc. I usually just bake the chicken in foil and spices/lemon juice, or stuff with a little cheese and spinach but I'd like to do something different.

    I would maybe bread it and in the breading put some parm cheese, italian seasonings and garilc. It won't make the calories sky high. :0)

    Or you could just put a lil olive oil on the chicken and then season with garlic/garlic powder (NO GARLIC SALT YUCK) .

    Or stuff it with bruschetta! mmmmmmmm that would be way yummy and just season the top with garlic/italian seasoning.

    I'm going to make lasagna with Eggplant tonight!! mmmmmm mmmmmmmmm Can't wait it'll be my first time without noodles!! I'm an italian food addict lol.. ;0)

    Try diced chicken breast with peppers and onions.

    Thanks for the suggestions - no peppers (and I can't stand them :( ), think I'll just try baking it with lemon juice/olive oil and italian seasoning and garlic.

    How do you stuff something with bruschetta?

    I would slice the chicken in long strips. Cook it in a fry pan with olive oil and a pinch of salt, pepper, and some of your favorite herbs. Serve it with the eggplant parm on the same plate that way people can mix it with the sauce. :)

    Oh, my bad, you don't want to add it to it! If it's bone in chicken you can cook it in wine and rub the spices on beforehand. I think it cooks best in a Dutch oven in this style.
