Creamed Spinach - Lo cal and DELICIOUS!

Pretty simple recipe I came up with last week when, after looking at my nutrients for the week discovered that I need WAY more potassium. Spinach is a good source and I do love spinach...

1 Tbsp butter
1 Tbsp EVOO
1 minced shallot (or more, or use red onion if you like)
2 Tbsp whole wheat flour (white flour works too)
3 cups nonfat milk
28-30 oz of frozen chopped spinach that's been thawed and pressed to remove excess water
Grated parmesan cheese (not the canned stuff; I use 1/4 - 1/2 cups)

Heat the butter and EVOO in a large saucepan and add the minced shallot. Sauted about three minutes on medium-high heat. Add the flour and stir for about one minute.

Add the milk and cover until it's barely bubbling. Reduce the heat to medium-low. Add spinach and cheese and a little salt and pepper if you like. Cook it all for about 15 minutes. Enjoy!!!!
