I made this to even the playing field on Superbowl Sunday. Yeah, my hubby wanted lots of delicious game foods, but I needed a little healthier fare for myself. Funny thing is, I barely got any with my kids gobbling it up!

Red peppers are SO good for you too! Lots of vitamin C. I scoop up TONS of them when they are on sale in the summer/fall months, and then home roast and either can or freeze myself :bigsmile:0
