Carrot Cake

I just made this today and have it waiting for me for dessert! Can't wait. I almost want to skip dinner and go straight for this :devil: :laugh:

Low Cal Carrot Cake

1 box betty crocker supermoist carrot cake mix
2 egg whites
1 whole egg
6 oz diet coke
1 1/2 c pumpkin
1/2 c raisins
dash each of cinnamon and nutmeg

Cream Cheese Frosting
1-8oz pkg Philadelphia 1/3 less fat cream cheese
1 Tbsp Smart Balance Omega spread
1/2 c sifted powdered sugar
1 Tbsp skim milk
1 tsp vanilla

Heat oven to 350 and spray a 9*13 pan with nonstick spray.
Combine all ingredients for cake, except raisins. When the batter is mixed well, fold in raisins. Bake 25-30 minutes, or until a toothpick comes out clean. Cool.

Fro Frosting, blend cream cheese and smart balance with a mixer. Add remaining ingredients and mix until smooth. Spread over cake.

Serving size, 1/12 of cake
Calories, 281, Fat 8 g, Carbs 48, Protein 4 g.

    That sounds great! Carrot Cake is my favorite. I can't wait to try it. So you can eat half of the cake for those cals??

    I wish!! No, it is 1/12 of the cake. Using a 9*13 pan, that still gives you a pretty generous slice. I scored the slices with a knife before cutting into it to make sure the pieces would be cut evenly.
    By the way, for anyone who makes this, store in the refrigerator.
    It was SO good...didn't taste the least bit healthy! :bigsmile:
