I make homemade taco seasoning (chili powder, cayenne pepper, red pepper flakes, a little basil, kosher salt, black pepper, garlic powder), and cook the chicken in a little olive oil. Sprinkle the powder on top while it is cooking, and it infuses with the hot oil and makes everything tasty!
Or, make a blend of fresh sprigs of rosemary and oregano, a few tablespoons of olive oil, a few cloves of garlic, and kosher salt. Blend in a blender or food processor, and cover a fresh whole chicken with the mixture. Shove a few cloves of garlic under the skin as well. Makes your house smell amazing, not to mention it's tasty.0 -
I like to take 1 lb of ground meat (chicken, beef, pork, or turkey) and brown it. Season it with cumin, cayenne pepper, and garlic. Add a can of tomatoes with chilies, black beans, and garbanzo beans. I can serve it as enchiladas, over rice, or alone. This freezes well and reheats great for lunches.0

Not sure if this will fit your macros but one of my favorite things is to cook chicken (any part) in a little barbecue sauce and beer, low heat, long time. You want to get it to the point where you can shred it with a fork. Great with rice!0

Pinterest is your friend. I live alone half the year while my husband is deployed and I just shrink down the recipes I get there.
Last night I made a chicken skillet that was good-- you rub down (heh) some chicken thighs with oil and herbs (I used thyme and rosemary) then sear them in a cast iron skillet. Remove chicken and add some butter and wild rice. Toast for a couple of minutes. Toss in some carrots, mushrooms, onion, garlic, and red potatoes and cook for a couple of minutes. Then add enough chicken broth to cover the rice, put the chicken thighs back on top, put a lid on the skillet (or cover with foil) and bake in the 400 degree oven for about half an hour or until rice/veggies are done.
Honestly I find that you either have to spend some time cooking and learning to cook, or be bored. Personally when I'm living alone I like to cook a lot-- it breaks up the monotony of evenings alone.
And yes, see a doctor for your depression.0 -
if you like fish, i recommend salmon. it's very good for you and can be cooked in multiple ways. i prefer to cook it with a bit of lemon, dill and thyme in the broiler. with chicken i agree about the taco seasoning (homemade of course), i also pan fry it with very little evoo, a dash of tyme, rosemary, coarse sea salt, and black pepper. as long as you use less than 1 tablespoon of oil, it doesn't add much fat or calories.0

Im so tired of chicken.Im 21 single and live alone.Dont want to spend alot of time preparing food. So please! Give mensome tasty chicken recipes or other meat recipes w rice.So depressed my head is really foggy and non creative. Thanks for all help
