I bought some quinoa today. Does any one have any recipes for using this for lunch ?

    I use low sodium chicken broth and add lots of extra veggies :)

    the one recipe I know I like... add a can of black beans (rinsed) and a can of diced tomatoes. then cumin and garlic, maybe some chili powder to taste. I don't have the exact measurements yet cos I've only made it once and I made it up! But it turned out pretty good, super high in protein!

    I have put it in soup or made it with a lil bit of chicken stock and ate it as a side.
    Google recipes and you'll find tons of ways to use it.

    I love it! And very filling!

    Here is a great recipe. I haven't figured out the calorie/serving breakdown yet, and it does make a ton, which could last you all week.

    *************OUINOA SUMMER TABOULI***************
    3 cups quinoa (blond or red) precooked and chilled
    1 cucumber, peeled and diced
    3 small (palm size) tomatoes, chopped
    1 bunch green onions, (6) trimmed and finely sliced
    1/4 cup fresh chopped mint (optional)
    2 cups fresh chopped parsley (curly is nice)
    1 large clove peeled garlic, minced
    for an extra nice flavor ..roasted garlic is so yum

    Dressing:
    1/2-3/4 cup fresh lemon juice (use less to start)
    3/4 cup extra virgin olive oil
    1 teaspoon of white pepper
    2 teaspoons salt, or to taste
    Tiny pinch of mild cayene pepper

    Premix dressing ingredients first... set aside.
    Prep the parsley, tomatoes, onions, garlic, mint (if using it)
    Mix all together then gently fold a few times into the chilled quinoa.
    Evenly distribute and fold again the mixed dressing into quinoa. To enjoy the best flavor of this dish, chill for several hours then remove and let the salad warm almost to room temperature
    Garnish with a sprinkle of chopped parsley and pine nuts (optional)

    check in the Recipes part of the Community board..there is someone having a challenge for the best Quinoa recipe...I printed off a few... lots of ideas from breakfast to salads...

    I mix it up with broccoli and some salsa, very simple and filling.
