Pancakes!! Yes that's right pancakes!

I made these today for the first time and they are soooooo good! I love sweet food and normally I hate all that clean food but these are good!
You will need:
2 medium sized eggs whisked in a bowl
2 bananas mashed up
1 small apple, peeled and diced into small chunks
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract (most expensive you can afford) the purer the better
Coconut oil for cooking
Raw maple syrup for serving
What to do!
Whisk up your eggs and mash up your bananas in separate bowls.
add the bananas to the eggs and whisk them together as hard as you can until you get a relatively smooth mixture (don't worry to much about lumps, I just prefer them smoother in texture)
Add the apple chunks and then all other ingredients, mix it all up well
In a frying pan add the coconut oil ( anything with a high burning heat, avoid cooking with olive oil etc) and fry the little pancakes this recipe should make 8 small but when I made them it made about 6!
You will find they do colour quite fast so keep and eye on them, the natural sugar in the apple can cause them to burn if left to long!
Serve with raw maple syrup! Tasty!
I ate 3 for breakfast and have frozen the others! To pop in the toaster or under the grill for a quick breakfast!!!
