Hello all, I am looking for some new veggie recipes to try out! Looking preferably for casseroles or something I can make on the weekend to portion out for meals for the week, relatively easy to make, and high in protein. Please share your favourites

Made that last night....it was good and we all liked it! Did not add cranberries or pistachios (I had mixed nuts and put a little on mine).
