Need make ahead veggie ideas to pair with salmon!

So I prep my lunch for a week ahead and I normally do salmon and rice. I'm starting to get tired of the rice so I'd like to make some kind of veggie side to go with it instead.
I was thinking of some kind of stir fry but I'm not sure what veggies to put together. I never used to like veggies so I really don't know what does and doesn't work. I was thinking something like onions, bell peppers, and maybe eggplant??
I'm open to any and all recipes/ideas!!

I love salmon with steamed broccoli and grated parmesan. Or brussel sprouts, anything dark green goes well with salmon in my opinion!0

Roasted asparagus goes wonderfully with salmon! Just drizzle on a tiny bit of olive oil and some red wine or balsamic vinegar, and pop it in the oven in an uncovered tray until it's nicely browned.
I also second the recommendations for broccoli, though I find it doesn't reheat very well if you steam it. Roasting it also works for me -- I just put it in the oven with a little olive oil and a couple of shakes of vegetable spice, and once it's done, it's easy to store in the fridge and reheat.
Does your workplace have a toaster oven? Reheating veggies in one will taste better than microwaving them.0 -
I love eggplant, onions and peppers in this Caponata from Rachael Ray. It makes a lot and is great cold too.

I made salmon and ramen noodle salad as a side. It was delicious. It keeps for days too.

baked sweet potato w/cinnamon...cake bake them the night before (a few of them) and just zap them with a lil butter/or whatever you like on them and some cinnamon...delish0

Kale. Can be refrigerated or frozen after steaming. Really you could do any vegetable and because you are replacing rice you might opt for a starchy vegetable (potatoes)0

I do roasted broc or a salad tbh...sometimes will do a mashed cauliflower as a side.0
