I got to try this one.OMG I have the best recipe for quinoa. It's super easy to make and it tastes like the insides of a Chipotle burrito.
NAME OF RECIPE: Black Bean and Tomato Quinoa
INGREDIENTS:
* 2 teaspoons grated lime zest
* 2 tablespoons fresh lime juice
* 2 tablespoons unsalted butter, melted and cooled
* 1 tablespoon vegetable oil
* 1 teaspoon sugar (I leave this out or use a packet of Splenda)
* 1 cup quinoa
* 1 (14- to 15-ounce) can black beans, rinsed and drained
* 2 medium tomatoes, diced
* 4 scallions, chopped
* 1/4 cup chopped fresh cilantro
DIRECTIONS: Whisk together lime zest and juice, butter, oil, sugar, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl.
Cook quinoa per instructions on the package.
Add quinoa to dressing and toss until dressing is absorbed, then stir in remaining ingredients and salt and pepper to taste.

OPINIONS ON HOW IT TASTED, ETC: See above. I make this religiously now and it's one of my favorite dishes. Even my boyfriend is hooked. We throw roasted chicken, cheese, light sour cream, salsa, avocado slices, etc. on top and it's a full meal. Very filling!

There are some great recipes. Just wanted to add a little cooking (prep) tip for those of you that say you don't like Quinoa. I used to hate it - but it is so good for you so I kept trying recipes and NOTHING! Then I read that you're supposed to RINSE quinoa before cooking (just run some water over it while it is in a wire mesh. This 30 second step has made all the difference in the world! It has a naturally coating on it that to me tastes almost like soap - doing the rinse gets rid of it and now I eat it a few times a week - just wanted to pass that on...

Quinoa salad with roasted vegetables
Ingredients:
1 cup zucchini (cut into bite sized pieces)
1 cup eggplant (cut into bite sized pieces)
1 cup butternut squash (cut into bite sized pieces)
1 tablespoon olive oil
salt and pepper to taste
1 cup quinoa
1 roasted red pepper (cut into bite sized pieces)
1 cup marinated artichoke hearts
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon oregano
salt and pepper to taste
2 cups baby spinach
1 palmful feta cheese (crumbles)
Directions:
1. Toss the zucchini and eggplant in the olive oil salt and pepper.
2. Place onto a baking sheet in a single layer and bake in a preheated 400F over for 30 minutes flipping once in the middle.
3. Cook the quinoa as directed on the package.
4. Mix the olive oil, balsamic vinegar, oregano, salt and pepper in a small bowl.
5. Toss the dressing into the salad.
6. ENJOY!
