Delicious winter veg casserole type thing!

I never post in the recipe section because I am not a great cook/chef and never really rave about food however I have just eaten a really delicious lunch and thought I would share it. Its 540 calories so not the 'lightest' but it is my main meal for the day, salad for dinner tonight. (we eat quite late at night so eat a larger meal at lunch time!)
I roasted parsnips, carrot, red onion, courgette and swede in my actifry with a few sprays of fry light (the root veg has to go in first, onions and courgette don't take as long) and then I fried a white onion in a little fry light until soft, added 500g passata, 1 tbsp of soy sauce, 1 tbsp of balsamic vingear and 1/2 (half) teasp of mustard powder, simmer for 10 minutes.
Add the roasted veg to the mix. I served it with chicken and a jacket potato. Yum yum, loads of veg and really filled me up!
Anyway, just thought I would share in case anyone else was looking for something yummy, filling and easy to make.
You could probably use any veg, I just used up what I had!
