i have a kale & quinoa salad that i make for people all the time. every time i make it, people always ask for the recipe. even if you're not a fan of salads, i promise this one will knock your socks off. (fun side story: i met the manager of whole foods a few months ago & we started talking about food, told her about this salad, & now it's offered as a pre-made salad at my local WF =] ) if i could only eat one thing for the rest of my life, it'd be hard choosing between this & ice cream....
i don't have many measurements, because it's up to you on how much you want in your salad based on your preferences. however, i do know that everyone who has made it (myself included), usually ends up with a bowl big enough to keep feeding you for 3 to 4 days.
also, this is a no-wilt salad, so stays fresh through out the week
what you need:
kale - chopped, as much as you want (i tend to use at least half a head or if pre-packaged, nearly the entire bag.)
quinoa - one cup to cook
toasted almonds (or whichever type of nut you like)
goats cheese
dried cranberries (i use natural, unsweetened) &/or golden raisins
fresh mint
salt
pepper
lemon juice
olive oil
balsamic vinegar
use bottom three to toss the salad until nicely coated. try not to use too much; the vinegar will melt the goats cheese, which will also be used to dress the salad.
mix all together & then put in 'fridge to chill for an hour or so....
you can also add any other veggies you want to the salad; i've put fennel, tomatoes, cucumbers, & broccoli in there before...all of which were fantastic.
