Oatmeal pumpkin protein pancakes

Credit to Fit, fun and delish


40 grams (or ½ cup) oatmeal
6 egg whites (12 tablespoons of liquid egg whites)
90 grams pumpkin pure (about ¼ cup)
2 tsp baking powder
½ tsp pumpkin spice
a splash of vanilla extract

Instructions

Grind the oatmeal first by using a coffee grinder, magic bullet or a blender
Add the rest of the ingredients and blend again.
Set a non stick pan to medium heat and spray with cooking spray.
Cook each side for about a minute.

Nutrition

About 300 calories, 36g carb, 3g fat, 27g protein, 7g of fiber for the whole batch

And they were amazing.

    Is that 7 g of fiber for the whole batch. Or, the entire nutritional breakdown is for the entire batch? Thanks in advance. They look great. Hope to make them this weekend.

    Yes it's for the whole batch, it will depend on the ingredients you use though obviously (the oats I used were Irish oats at 160 calories for 40g).
