Delicious chef salad, how I do love thee!

I made the yummiest chef salad for my lunch today.

2 c chopped-up lettuce
1/3 c salt-free canned green beans
1/2 c steamed broccoli
handful of shredded carrots (from Trader Joe's)
slice of honey smoked turkey (Costco), julienned
hard-boiled egg, sliced
stick of string cheese, cut into 1/8" slices
2 T ranch dressing

If I'd had beets and/or tomatoes, I would have added them to. Just delicious, so filling, and only 224 calories total!

    I love a good salad!! I never thought of green beans, ill have to try that!

    A chef salad traditionally has meat and cheese on it usually Ham and Turkey. It also usually has two types of cheese, cheddar and swiss. Also an egg.

    A normal garden salad would be lettuce tomato and maybe cucumber.

    Her version of a chef is an excellent substitution. Great job!

    Thanks. Being veggie, salad has always meant, well, salad to me. Leaves and stuff.
  • Good on you. If you like asparagus, begin your preparation by putting some asparagus in a shallow container and covering it with boiling water. By the time you've fiddled around with everything else it will be just par-cooked and will cool quickly for adding to other ingredients. I do the same with fresh, green beans.
