Exciting things to do with Quinoa?

Make a pot of it, take it on the train, then flick blobs of it at morning commuters.
LOL....I was thinking make a pot and take it on a rollercoaster, that could be exciting.
I actually don't know, it's like cous cous isn't it? as in, great if you add lots to it? what about adding cream and sugar to it and making rice pudding? but well with quinoa

I don't exactly have a recipe because I kind of just guesstimate but I got the idea on Pinterest. I usually add a little EVOO (the smallest bit) to a pan and add some chopped garlic and jalapeño. Add some diced red onion, tomato, etc etc (sometimes i do corn, red or green peppers, whatever I have on hand.) then I do about 1/3 of a can of black beans and 1/4 cub dry quinoa. Then I add about the same in water (add a little more as it cooks but I start with 1/4 cup), some seasoning (cumin, garlic powder, salt, pepper). Mix it up, cover, and let simmer for about 15-20 min til quinoa is cooked and yummy. Again, adding a tad bit of water here and there. I like this recipe because you can do a lot with it and add/substitute different veggies of your choice. When I make it this way I add avocado and a little dollop of Greek yogurt once plated. I wish I could find the recipe on Pinterest but I cannot right now.0

This recipe came together by chance. It is yummy, bright and fresh. A friend perfected the dressing. You can add or subtract fruits or veggies that you prefer. Enjoy!
Quinoa Salad
2 cups cooked quinoa, chilled
1/4 cup diced red onion
2 mango's diced
1/4 cup toasted diced walnuts or pecans
1/2 bunch cilantro, finely diced
1/2 red pepper, thin small slices
1/2 yellow pepper, thin small slices
3 tablespoons feta cheese
4 ripe strawberries, sliced
toss together
Dressing
1/2 cup citrus flavored olive oil
juice of 1 lime
1 tsp lime zest
1/4 cup of seasoned rice vinegar or flavored balsamic vinegar
2 Tablespoons of sugar (may use agave or honey)
1/2 tsp. kosher salt
1/4 tsp. fresh cracked pepper0 -
I like quinoa in salads. I make one based on something I once ate at cafe. Cooked quinoa, shelled cooked edamame, blanched snow peas, a little sun dried tomato, halved cherry tomato. Add some vinaigrette made with 1 part balsamic vinegar to 3 parts olive oil.0

I use it to make mac & cheese. There's recipes online, I just tweak them a little to lose some calories. So good.0

Google Whole Foods California Quinoa Salad.
It has edamame, mango, red bell pepper, red onion, coconut flakes, slivered almonds, raisins, and balsamic vinegar.

I fed mine to my worm farm - they love it. Then I use the compost they make and grow something worth eating; like peppers and tomatoes so all is not lost!0

I made this easy crockpot recipe over the weekend and it was GOOD...chicken, sweet potatoes, black beans, tomatoes, and quinoa....all healthy stuff (although I'm sure the sodium is high):

-Add goat cheese and nuts and put it on sliced veggies (like julienned carrots, cucumbers, etc).

We ALWAYS have a batch of steelcut oats and quinoa in the fridge.....
1 cup quinoa (rinsed)
1/2 cup steelcut oats
1/4 cup maple syrup (or honey)
1-2 tsp of vanilla
cinnamon to taste
3 cups water
Throw it in the slow cooker on high for 3 hours and voila!
when serving add whatever you like....nothing, milk, banana, nuts, whatever

Quinoa cakes! I made mine up as I went, but this recipe looks yummy. When I made mine, I made a spicy basil sauce with mayo, basil, lemon juice, & sriacha. It was yummy.

What I love to do is make guacamole with tomato and red onion and stuff and mix it into cooled quinoa after its cooked. Trust me it's delicious! Alternatively, hot quinoa, miz in tomato sauce with sauteed veggies. I also like to add peas and other veggies directly into the quinoa as I'm cooking it.0

This is a really delicious recipe I found a while back. It's quinoa with corn and zucchini and feta with a lemon honey vinaigrette. It is SO delicious. The vinaigrette completely transforms it. I"m not a tomato fan, but you can put those in too if you want.

I use chicken stock instead of water. I use it as a filler in meatballs, soups, stuffed cabbage, with stir fried veggies. Get creative!

Quinoa loaf from PCC is AMAZING! You can get in the deli, but I have also made it using their deli recipe posted online. It's a great meatloaf substitute for vegans.

I use it in salads. I have some precooked in the Tupperware in the fridge, put a half cup on a green salad instead of croutons. or use it in a 'bowl' like Laughing Planet or such with beans and greens for lunch.0

I am digging this Chocolate Quinoa Granola that I have. No recipes but seems simple enough to make. Perfect for breakfast.
Ingredients include oats brown rice syrup, brown sugar, coconut, almonds, sesame seeds, freeze dried berries, vanilla extract, salt, baking soda. I am planning on recreated this one.0 -

I add it to a lot of things...especially soups because it sort-of thickens it a bit. One Skinnytaste.com recipe that is awesome is Crock Pot Sante Fe Chicken...seriously, this recipe is amazing (the whole family loves it)! I will add some quionoa into this at times.
Be sure to add lots of cool spices to the water you boil the quinoa in...much tastier then.
I will also quinoa to egg-drop soup in lieu of corn starch to make it "different" and to add a little more protein to this tasty low-cal soup (I use egg whites only).0 -
I made an enchilada casserole with it in my crockpot. Cooked on high 4 hours. Was delish. I found the recipe on Pinterest. Ground turkey, black beans, frozen corn, onion, garlic, canned tomatoes, enchilada sauce and season to taste with what you prefer. I used cumin, chili powder, garlic powder, pepper and just a little salt. Top with cheese & sour cream (optional). I just ate mine in a bowl with some lettuce on the side. My daughter put her's in a tortilla.0
