Hi everyone, I was wondering if you thought scrambled eggs on toast was a good option choice for lunch or dinner. Is it healthy? Is there anything i could add or subsitute to make it better? Thanks

I use the Kirkland eqq whites from Cosco. I also add in fresh spinach, tomatoes, onions and mushrooms.

I'm doing low carb, I have eggs every morning for breakfast. Scrambled with Cheese, overeasy with Bacon, fried with sugar free Ketchup, omlete w/ veggies.

Sure! Make it whole grain toast though... if you want to save some calories & fat, you can use 1 whole egg and a few egg whites. Scrambling with veggies is also a plus.

I eat that for supper all the time!! I usually do one whole egg to two egg whites and make sure I have healthy fiber filled bread (my bread is a little higher on the calorie side but has fiber and protein in it Nature's Pride with Flax). I'll wilt some spinach (asparagus is also good believe it or not) and add that plus a wedge of laughing cow cheese --- all for about 250 calories. I eat bigger lunches and breakfasts --- if you don't do that, you may need more calories.

I mix together 1 full egg with 2 egg whites and add mushrooms, onions, tomatoes, fresh spinach, and sometimes swiss cheese. Add a slice of whole grain toast and I'm set for the meal.
  • I make a "pancake" with eggwhites and ground flaxseed that is awesome and filling. Take 4 egg whites, 2 tbs. of ground flaxseed, sweeten with Agave or stevia and cinnamon. Fry with pam, and top with fruit, sugar free syrup, or sugar free jelly. They are awesome, filling, and the flaxseed is filled with Omega-3's!

Scrambled egg on wholemeal bread is the perfect breakfast I think :) Keeps you full for ages, even better with a little smoked salmon on top.
