Low fat spaghetti bolognese

I am not vegetarian but a friend told me recently she uses courgette as spaghetti and it was really tasty this evening topped with Quorn mince spaghetti bolognese. Enjoy !!!!

Serves 1

Courgette, peeled and cut into thin strips (to make spaghetti)
Fry light low fat/calorie spray
100g of quorn mince
200g tinned tomatoes
1 clove garlic
Half a red pepper (capsicum), 4 mushrooms sliced and 1 onion chopped
Bisto gravy granules (1 teaspoon but you can have more), tomato puree
1oz cheddar cheese, grated

Boil courgette in water for five minutes
Whilst that's boiling, spray frying pan with Fry Light (low calorie spray) and cook through Quorn mince with onion, capsicum and mushrooms until cooked, add tomatoes with garlic, tomato puree and bisto and water (splash of to make a bit more liquid)
Strain courgette and top with Quorn bolognese topping and top with 1oz cheddar cheese if desired
