But I am getting healthier, losing weight and regaining muscle mass. I feel tons better and am able to do more than I have been able to in ages. My wife and I are involved in a Diabetes Prevention program through our local YMCA. I was losing weight before that, because I was tracking my calories in and out. Now I am learning to balance my diet by paying attention to percent of macro-nutrients. My all time high weight was 270 pounds. I'm now at 221. I have gone through 4 belts in 4 months (all of them smaller than the last!).

If I can do this, anyone can. I am in love with meat, butter, olive oil, pasta and taters. Things that grew but didn't wander from place to place were food for the things I ate, mostly. Actually, I do enjoy vegetables, and I am learning to vary what I eat. I am learning to use different grains, even though nothing is as wonderful as jasmine or basmati rice, I am beginning to appreciate what brown rice, faro and millet can bring to the table. Beans, once the bane of my existence, have become regular parts of mealtime in my house.

I guess what I am bumping my gums about is that you don't have to give up the food you love if you learn to tolerate the food you aren't so crazy about. Then you can feel good, and continue to have Mushroom Risotto and a 5 oz. grilled Pork Tenderloin in cream sauce once a week. (Maybe more often depending on how good you were all week.)

    Thanks. Can't help it though. I am a foodie and have always regretted not attending a cooking school and then apprenticing throughout the world.

    Oh lefse! My grandmother made the best! You used to be able to buy decent lefse in the stores, but since returning to Minnesota after 24 years of living in many elsewhere's, the stores no longer have good lefse. Wish my grandma had taught me.
