I use this one but skip the water/broth and add an undrained can of black beans. I like texture and "stuff" in my meatloaf.

The one I make is the same as yours (no broth), but more onion. The black beans sound like it would be good!0 -
Wow, thank you so much.. Never would have thought of black beans. Will DEFINATELY try.0

I like this one a lot. The topping is great too.

Meatloaf muffins. I've tweaked it a bit, original recipe at link below:
http://www.myrecipes.com/recipe/diner-meat-loaf-muffins
1/2 onion finely diced
8oz white mushrooms, finely diced
1 small green pepper, finely diced
2 large eggs
1.25 pounds ground beef (at least 90% lean)
2 cloves worth of minced garlic
1/2 cup ketchup
2 Tbsp yellow mustard
20 reduced fat Ritz crackers
1 tsp Worchestire sauce
1/4 tsp ground black pepper
1 tsp oregano (or italian blend)
1/2 cup BBQ sauce (recommend Sweet Baby Ray's HOney BBq)
Cooking spray (Pam)
Preheat oven to 350 F
Dry fry onion, mushrooms and green pepper in non stick pan until released juices dry up and veggies start to brown. Let cool. (I sometimes do this the day before or a couple hours before if I plan well, but you can do it right before.)
In a large bowl, combine eggs, ground beef, keptcup, mustard, crackers, Worchestire, pepper and oregeno. Add in cooked veggies and mix well.
Spray 12 cup muffin tin with Pam then divide ingredients as evenly as possible into the 12 cups. Top each "muffin" with a dab of BBQ sauce.
Cook for 25 minutes, turn off heat and let sit for 5 minutes.0 -
Thanks guys. Talk about some great ideas. Can't wait to try these!0

I make this meatloaf
http://allrecipes.co.uk/recipe/626/juicy-meatloaf.aspx
Goes over pretty well with the family but it's the only recipe I've used (in the UK where meatloaf isn't as common). According to the recipe builder a quarter of it is:
calories 431 Carbs 17 Fat 29 Protein 28 Sodium734 Sugar 50 -

Love both. We don't use the 99% fat free turkey for the first one though, but the regular stuff.0 -

Thanks again for all the ideas!!0

Now I am hungry for meatloaf!0

I usually just mix some ground beef with egg and oatmeal then spice it with garlic powder, onion powder and paprika. I'm also a picky eater, so most of the meatloaf recipes end up adding things I don't like. I'm sure I got there is a recipe somewhere, but now I just calculate how much I want of the ingredients to fit my macros. I like making them in a muffin pan to pack for lunch. They heat a bit easier that way.0

Sounds good too. My husband LOVES a meatloaf sandwich, but love the muffin idea also, thank you..

You MUST try the Mexican Meatloaf in The Shredded Chef cookbook by Michael Matthews. I'm telling you, you will never try another meatloaf recipe. I haven't shared this with even one person who doesn't demand the recipe. It's tops! You don't have to get the book, although there are many great recipes in there... Just Google it.0

Is this it?? It looks incredible....thank you so much!

Yes!! Doesn't it look lovely?! The taste is divine and it's loaded with good stuff. It's a no-brainer. So... What time is dinner?0
-
Lol.... You will be my guest for dinner, but you might have 23 German shepherds helping you....0

T.W.E.N.T.Y-T.H.R.E.E.!!!!
My word.... That's a lot of kibble!! Do you rescue them? Or breed for profit? Do you have any of the rarer white shepherds?0 -
I just finished entering my wife's venison meatloaf into the recipe thing here. Really just normal meatloaf (but with venison)...eggs, tomato sauce, italian bread crumbs, etc., but topped with a sauce of brown sugar, white vinegar and spicy brown mustard.0

Yes, we raise them for SAR... search and rescue... Friends have 2 white shepherds and both dogs are deaf... Some say that happens frequently.

I wrap my meatloaf in bacon before baking. It's always a win.0
