I'm cutting back on carbs so I have been dying for peanut butter because I can't eat bread or crackers. I found Mission Carb Smart tortillas that only have 6 net carbs so I can have peanut butter now!
Peanut Butter Tortillas...
You will need:
peanut butter
Mission Carb Smart Tortillas
Butter or butter substitute
Cook a tortilla in a skillet with butter on both sides until one side is slightly crispy.
Remove it from skillet and add a little more butter for flavor and add 1 Tbsp of peanut butter
and roll up (as best you can since it's slightly crispy). I roll and then flatten so it won't unroll.
Total carbs is about 9. Great snack when you crave peanut butter!

This isnt low carb, but I will cover the tortilla in peanut butter, put a banana on it and roll up. Pb burrito. Yummy.

Love tortillas w/ PB. Sometimes at my house we drizzle a little honey in there before wrapping it up. They are lovingly known as "gooey nuts".

Hmm. I think if I wanted peanut butter and didn't want many carbs ... I'd just eat it off of the spoon. ;)
