    I'm making this tomorrow night if you want to steal it.

    Starter

    Spicy Tuna Cucumber Bites

    150ishg of raw tuna finely diced. (You could use tinned stuff if you wanted to. I have and it still tastes good)
    One large cucumber
    1.5 tbsp of mayo/Greek yoghurt
    Garlic powder to taste
    Sririacha/other hot sauce to taste.
    Dried nori (optional garnish)

    Just slice up the cucumber and mix all other ingredients together. Use the mixture to top the cucumber slices like little crackers. Garnish with nori


    Main


    Easy Stir fry with rainbow noodles

    1 large zuchinni
    2 carrots
    Assorted stir frying veg of your choice (I like brocolli, cauliflower and bean sprouts.)
    Meat of your choice (I'm using diced chicken thigh)
    Sesame or coconut oil
    'The Heat is On' peanut butter/regular peanut butter + chilli flakes


    Use a mandolin, peeler or knife to cut the carrot and zuchinni into very thin noodle like strips. Set them aside with some salt to pull out any additional water.

    Heat the oil in a pan, brown the meat then add the veg. Stir in a tablespoon of the chilli peanut butter. Turn the heat down and cook until meat is cooked through.

    Remove the meat and veg with tongs, allowing the left over oil/sauce in the pan. Add a little more oil if you like. Add the carrot and zuchinni to the pan and sauté for around 5 minutes.

    Use the carrot and zuchinni as noodles and serve the meat/veg/sauce combination over the top. Very yummy

    I have started using pulses to add a great nutrient punch and variety in my diet. I had no idea what you could do with pulses. I just ordered a grain mill so that I can start using them in lots of things without wrecking my food processor. Here is a video about using chickpea flour in place of wheat flour.     I have started making my own baked beans and hummus as well. Pulses are awesome, and sooooo cheap.

    Meat and vegetables--any meat (including seafood) and any combination of non-starchy vegetables. I'd add fruit (sugar and carbs) and/or some starch-based side (potatoes, sweet potatoes, etc., carbs), probably, but you obviously don't have to. Just have more meat and 2-3 different veggies, plus some kind of fat, maybe butter on your fish or guacamole or some such.

    Spaghetti squash with meat sauce or meatballs
    chicken lettuce wraps
    lettuce tacos
    taco salad
    stuffed chicken
    stuffed cabbage
    cauliflower shepherds pie

    I don't eat low carb, but enjoy these foods and am a pinterest junkie. You can find many ideas on there.

    Tonight we are having a favorite with the whole family, even the carb loving "I'm not eating anything other than a nutella sandwich" teenagers.

    Cut up a heap of chicken breast/thighs.
    Coat in whole egg mayo then parmesan cheese.
    Bake in the oven until cooked.

    Best chicken ever, and no carbs.
