5 Spice Chicken Bahn Mi Sandwiches

Not sure just how healthy these really are, but they taste amazing. (Taken and adapted from http://www.foodwoolf.com/2009/03/chicken-banh-mi-recipe.html)


Ingredients:
¾ cup sugar
¾ cup rice wine vinegar
¼ teaspoon (rounded) salt

Mixed and poured into separate bowls of matchstick carrots, sliced english cucumber, and sliced red onion. Allowed to pickle all day


Five spice Marinated Chicken
1/4 cup soy sauce
6 garlic cloves, minced
4 shallots, chopped ( i used green onions)
2 tablespoons fish sauce (mushroom-based oyster sauce)
1 tablespoon sugar (I used honey)
2 teaspoons five spice powder (anise, cloves, cinnamon, ginger, black pepper)
6 large skinless boneless chicken breasts


Spicy Lime Mayonnaise
¼ cup favorite mayo
juice of one lime



Marinated everything all day. Grilled the chicken on the bbq and served on Villagio sausage buns.

    Actually, it doesn't look bad at all. I would guess 450-500 cals per sandwich.

    That was my rough calc.

    Go light on the mayo and heavy on the veggies. And avoid the pasta salad and chips on the side

    I live in a city with numerous bánh mì shops, and this looks amazing! I especially love the ones on freshly baked french bread, ahdlkjhdkasd. So hungry now.
