i didn't think about using it as replacement for ricotta, that's a great idea!
i have it on toast, or eggs on toast, not sure about both…
with cucumbers, maybe in a pita?

I'm not a fan of the water/sauce in Cottage Cheese so I buy the dry curds. Same great protein, 0 sodium, 0% fat. I then add coconut milk or chocolate soy milk where I can control the added sodium/fat.0

A couple things I like, drain it, toss it into a food choppah for a few spins, add in orange zest, a little brown sugar, and powdered ginger.
Roll into a crepe like a burrito. sautee the crepe until nicely browned, and flame with a little rum.0 -
Good mixed with beans, mixed with eggs, used in lasagne or manicotti, mixed in tomato-based sauces, mixed with fruit (if I mix with berries, I usually smush up a few berries so the juice sweetens the cottage cheese), mixed with tuna, mixed with pickled beets, mixed with avocado, etc.
Tried this for the first time last week. Really good. Cut an apple into small chunks. microwave for 1 minute. Mix cooked apple into cottage cheese (as much as desired) add cinnamon, your choice of sweetener (I used cottage cheese with pineapple so I didn't add any sweetener), vanilla, cinnamon, raisins, chopped pecans or walnuts. Put in fridge overnight and eat the next day.

I love adding diced avocado and Sriracha to it, great snack or side dish for a meal.0

I love my cottage cheese savory so a bit of Sriracha on top is a go-to for me. I also love cottage cheese on top of a baked potato with some salt and pepper.0

I can't stand the consistency but I know its good for you so I use it in pureed form. I usually use it to make protein pancakes or protein pudding. For the pancakes you just blend equal amounts of oatmeal, cottage cheese and egg (or egg whites); like 1/2 cup of each for example. You can add in fruits, cocoa powder, etc for additional flavor. For the pudding I will usually throw it in the food processor with some peanut butter, a Tbsp of sugar free pudding mix and a scoop of whey protein....sometimes a bit of milk if its too thick. I'll eat that for my last meal of the day since casein is supposed to be slow digesting. I like adding Hidden Valley spice packet stuff to it that is intended for making dressing, just a tad does it. They have of course their normal Ranch, Fiesta, Salsa something or other, several flavors.0 -

When I make scrambled eggs, I put about 1/4 cup of cottage cheese in. It makes the eggs fluffy!

Sounds good, The other day I was making scrambled eggs and though what the hey lets toss in a can of tuna while its cooking.... Was so bad...lol...I did eat it but never again.
