Does anyone have any suggestions on what I can make with fresh spinach. Tonight I added it to pasta but what else can I do?

I put it in smoothies and scrambled eggs and pasta also.0

This is one of my all time favorite veggies!
- Saute with a tsp of olive oil and some fresh garlic until wilted. Top with slivered almonds
- put in a microwave bowl, add a few tsps of water, cover, microwave for 3 minutes. Add to any ground turkey recipe. I use it frequently in sloppy joe's, meatloaf,and even burgers
- Wilt it in a pan, then add to scrambled eggs
- Replace lettuce with spinach leaves in a salad
- Use as a topping for sandwiches0 -
omelettes...and I have a big spinach salad with lots of vegetables and a little protein nearly every work day for lunch...really filling...0

saute it with a little olive oil, garlic, and lemon juice, sprinkle grated parm. over it
make a salad (I have several diff. salads I make with spinach)

I use frozen, chopped spinach in with ground chicken breast to make tacos. You don't taste it/ kids don't know it's there.
Use in salads.. or as your salad base.
Replace lettuce with it in sandwiches. It has 5x more fiber than lettuce! :flowerforyou:0 -
Green smoothies are the way to go! Toss a handful of spinach or other greens into the blender with a cup of Trop 50 OJ, a banana or two, and your favorite juicy fruit (Try some cantaloupe or papaya-YUMMMM).

Crustless Spinach, Onion and Feta Quiche
Ingredients
1 medium onion, diced
6-oz fresh baby spinach
2 large eggs
1/2 cup egg beaters (liquid substitute)
1/2 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
pinch cayenne pepper
1 1/3 cups non fat milk
1/2 cup feta cheese
Directions
1. Preheat oven to 400F.
2. Lightly grease a 10-inch quiche/tart pan (or a pie plate)
3. In a medium frying pan, cook diced onion with a bit of vegetable oil (or cooking spray) over medium-high heat until translucent and tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes
4. In a large mixing bowl, whisk together eggs, flour, baking powder and salt. Whisk in milk, then stir in spinach-onion mixture.
5. Pour quiche base into prepared pan. Top with feta cheese.
6. Bake for 25 minutes, or until center is set and the outside edge is golden brown. (I had to cook it for over 30 minutes)
Let set for 5 minutes, then slice and serve.

Herb goat Cheese stuffed chicken breast
1/4 cup panko
2 tbsp chopped fresh mint
2 tbsp chopped parsley
4 oz goat cheese
4 (6oz) skinless boneless chicken breast halves
1/2 tsp salt
4 tsp evoo
1/4 tsp crushed red pepper
10oz package fresh spinach
lemon wedges (optional)
preheat broiler to high. combined first 4 ingredients in a small bowl. cut a horizontal slit through thickest portion of eat brast half to form a pocket. stuff 2 tbsp cheese mixture into each pocket, close each opening with a wooden pick. sprinkle chicken with 1/4 tsp of salt
heat a large non stick skillet over medium high heat add 1 tbsp evoo to pan. add chicken to pan and cook for 2 min on 1 side or until browned. arrange chicken on baking sheet browned side up and broil for 8 min or until done.
heat skilled over medium high heat and add remaining 1 tsp oil, red pepper, and spinach. cook for 2 min or until spinach wilts. stir in the remaining 1/4 tsp salt
4 servings. (1 servings= 1 chicken breast half and 1/2 cup of spinach)

I add spinach (and baby carrots) to all my fruit smoothies.
I also put it in my sandwich rolls. Lots of it.0 -

I sautee it in olive oil with minced garlic and spring onions. Delicious.0

Saute some shrimp and use the spinach in that. Spinach and Shrimp go really well together. Just let it wilt in the pan with the shrimp once it is done.0

My favorite salad of the week:
-organic baby spinach
-cottage cheese low fat 2%
-cooked cut up chicken breast
-pomegranate seeds
Mix it all together and enjoy!0 -
good thing is my daughter loves fresh veggies if that is all we had for dinner she would be happy! Thanks for the tips0
