EASY blended soup recipes?

I've been craving soups, but I'm pretty much scared of any recipe that has more than 6 ingredients... I've made butternut squash soup and it's delicious, but are there any other easy recipes? I don't really like 'chunky' soups (with big piece of stuff in them), so blended is best...

    Do you have an immersion blender? If so, try cauliflower soup thickened with rice and seasoned with curry. A head of cauliflower, a quart of stock and a 1/2 cup of rice is about right.

    Oh they both sound good! Yes I have an immersion blender, that's how I make the squash soup.

    I make carrot, cauliflower and ginger soup - just boil up a bunch of carrots and cauliflower in some chicken or vegetable stock with some grated ginger and use your immersion blender on the cooked product.

    Broccoli Cheddar is delicious too. I don't have a recipe to hand, though.

    Potato, Leek and Carrot soup! Just dice the vegetables, boil them in broth and then blend them. You can top it with some yoghurt for extra flavour :)

    Broccoli Leek soup is good. Chop the veggies, cook them in chicken broth, then blend.

    You can add cauliflower or potato too. And if you like, you can add milk or cream.

    I made a gorgeous one yesterday that was really easy. Saute an onion and garlic in a teaspoon of butter, add a few of cups of mushrooms, a couple of large potatoes, few sprigs of tyme and some chicken or veggie stock. Boil till soft. Puree and add a cup of milk and a dollop of Greek yogurt. Loved it!

    I use chicken broth and a can of stewed tomatoes for my base, and then add just about any veggies to that. If you're good at using seasonings, just about any combo of veggies works. Even better, if you make a large pot of soup for several days, leave it unseasoned. Then each day, add a new seasoning directly to your bowl. That way, it's like a new meal each time.

    One of my faves is steamed cauliflower, potato, garlic, salt and pepper. Blend, serve, eat, yum.
