Tofu

My husband will be out of town this week and I'm taking the opportunity to try Tofu. I've NEVER had it before and I've never cooked with it before. Any suggestions, tips and/or recipes?

    I lilke tofu. It is good cubed and sauteed. you can add some soy or garlic what you like. Good over stir fry. You have to watch your portions on tofu, it is pretty high in calories.

    Buy extra firm and suck the water out by covering it with paper towel and putting a hard book on top for 30-45min

    I skip the crust altogether. Just make sure it's a really neutral-flavored tofu.

    My fave is dipped in bread crumbs, and baked! Just like little chiky nuggets :D

    I marinate it and grill it!

    Press it, like Amie_46 described. Then soak in a marinade -- I use 1 part each balsamic vinegar, red cooking wine, tamari (or soy sauce), and a little sesame oil and garlic. It's not like meat so it doesn't have to soak for very long - just coat the outside. I usually toss the same marinade on a vegetable - it's awesome on asparagus.

    Then, grill for about 10 minutes on low, each side, along with veggies. Serve over brown rice. Save some of the marinade on the side if you want a little more flavor.

    If you have leftover tofu, it's awesome the next day cubed and stuffed into a pita.

    I've got all the ingredients to try out a tofu recipe tomorrow. The tofu is "supposed" to be the beef replacement and it apparently is a really good recipe. See it here:

    I could not find extra-firm tofu but I will try the trick someone mentioned previously about soaking the water out of it.:glasses:

    I like it in soup, too. Extra firm cut in to 1inch chunks, make a tasty broth and then boil the tofu in it for 10mins or so. Of course, my favorite soup bases have WAY too much sodium, so I haven't eaten tofu since I started MFP! Will have to figure something out because I have been craving it!

    One of the easiest things I do is buy herb extra firm tofu, cube it and mix it with a bit of spaghetti sauce (whatever your favourite is), and serve it on couscous (super fast) or quinoa. You could serve it on rice too.

    treat it like fish or chicken, remember to drain it before cooking, I like to cut it in strips and grill it ( like fish fingers) and put it on top of green leaf salad with salted capers, put what ever is left over in the fridge again and cover with fresh water.

    Update: I made the tofu chili and it was good. The tofu resembled hamburger so I bet you could even pass it off as hamburger. I used firm tofu. I read somewhere that if you freeze it, it crumbles better. Did not work for me. I froze and it ended up like a block of ice. I then had to thaw it in the microwave. Once I got it thawed out again, I put it on a plate on top of 3 paper towels and just squeezed the water out of it like a sponge. After that, I was able to crumble it up.     Warning: there are a lot of beans in this so if you work in a library or a quiet environment, maybe save it for the weekend. Just sayin'...:happy:
