Does being less strict at weekends and being at a healthy weight make it harder to lose weight?

Hi all!!!
Facts first: 5 ft 3; 23 year old female; around 10 stone probably a bit less maybe 9 stone 11/12 but it varies with weighing scales also, according to my work weighing scales im 10 stone 2 or 3!!!
So first off I am what you would call a relatively healthy weight for my height although only just about! Secondly I decided about 2 months ago that I was not entirely happy with my weight and my appearance so I started to eat a lot healthier and do more exercise.
However with the last 3 and a half weeks I have started a very good fitness dvd that has to be done everyday for 10 mins and involves 6 work outs over 6 weeks which increase in difficulty.
However because I was a bit fitter starting off the dvd, with the last 2 weeks I have been doing 2 work outs everyday adding up to 20 mins everyday and this week I started doing 3 work outs adding up to 30 mins everyday!
Also I have been quite strict with my diet during the week, trying to eat around 1300 calories everyday but it might creep up to 1500! Here is a typical day during the week:
Breakfast:
Porridge made with skimmed milk and 1 tbsp. of honey (correct portion size, about 250 calories)
Snack: an apple 100 calories
Lunch:
2 stoneground slices of brown bread topped with 1 halved ham slice, lettuce, spring onion and a spread of tomato relish
1 cup of chicken or veg soup 350 calories
Snack: fat free fruit yogurt 100 calories
Dinner:
Tomato based pasta or portion of fish or piece of steak (cooked in low cal spray) with a portion of brown rice or 2 small potatoes with plenty of veg ( about 450 or 500 calories)
Snack: an apple or fat free fruit yogurt 100 calories
However I will be honest I am always less strict at weekends so I might clock up to 3000 calories or a bit more on a Saturday and up to about 2000 calories on a sunday!
And the results of all this hard work even if there is less strictness at the weekends has resulted in no weight loss whatsoever!
So does being less strict at weekends really tamper with weight loss even if it isn't a total blow out? Or am I just being impatient and I just have to wait a little longer to see weight loss results especially because I am at a relatively healthy weight?

Is it true weight you're looking to lose or to do a body recomp?
If it's the latter (as you say you're at a healthy weight), I'd probably suggest doing strength exercises (body-weight or lifting) as that will trim and tone, unlike dieting.
Someone else will know how to go about doing a body recomp better than me, but if it's aesthetics that is what I would suggest. Good luck0 -
If you are going up as high as 3000 on a sat and 2000 on a sun, then based on (admittedly rough) calculations assuming maintenance at about 1800 (and averaging 1400 on a week day), you're barely in deficit for the week, so you probably won't see much actual weight come off, maybe a pound every 6 weeks. This doesn't mean you won't be recomping though.0
