    My brother-in-law does that. He says the bird comes out better. I think that he merely likes working with equipment.

    So don't do it on a wooden platform in or near your house while letting it overflow and then just sit there and watch while it turns into a giant fire... got it! Thanks.

    I have fried my own turkeys for probably the last 15 years without an incident. They always turn out great and it's a quick cook. This year I'm returning to a smoked turkey. Acquired a Cookshack smoker a few weeks ago and it takes all the work out of smoking. I love the smoked birds and did that for years before I got hooked on frying.

    That's why it's not frozen, nor wet. You defrost it, brine it, dry it for a day or so, and then put it in the oil. It's manageable, only reason I don't do it is that I don't want to deal with all that waste oil. It's a simple process though.
