I have been losing steadily for a little over a month and am really happy with my progress. However, my mood has been suffering quite a lot. I am short and snappy with almost everyone. What am I missing? Or is it just my bodies initial reactions to the drastic changes from eating junk to eating healthy(ish).

hangry? how large a calorie deficit have you got? how much fat do you eat?0 -
I'd put money on hangry. What are your macros like of a day? And how much are you eating?0

This. I only get snappy with others if I'm not eating enough... OR if I'm not getting enough exercise.
You need to take a look at how much you have to lose and how quickly you're trying to lose it. Are you following MFP recommendations or are you eating too far under your calorie goal?

I'm eating an average of about 1700 calories a day and if I up this to improve my mood my weight loss will stop. Are there any particular foods that I could eat instead of my usual that would help? Average days meals would be:
Breakfast - Cereal
Lunch - Leftover dinner from last night or pasta pot from local supermarket
Dinner - Usually something including meat (Stew / Curry / Shephards Pie / Garlic Chicken)0 -
First: figure out how many calories you should be eating. *I* eat about 1700 and I'm a menopausal woman. Next: switch breakfast to something more nourishing maybe eggs and with some veggies? And maybe add some vegetables and legumes in place of the pasta pot for lunch.
Eat snacks.
