Going vegetarian and in need of recipe site...

Hey all.
My husband and I have decided to give Vegetarianism a go for 30 days. I have a lot of great recipes from skinnytaste.com and cookinglight.com, but I was wondering if you have any sites that are geared more to a vegetarian lifestyle. We aren't going to make this a permanent change, but we are leaning towards vegetarianism for the majority of our meals after the 30-day period. Our thinking is that if we can sustain on a vegetarian diet for the bulk of the week, then we can afford to purchase free-range/organic meat for the 1 or 2 meals/week that we do eat meat (after the 30 days).
I am super excited for this change, and I can see it turning into more than a 30-day goal, but my hubby isn't so sure. If I can gather an arsenal of really delicious meals, it would go a long way to convince the carnivore in my house. We already don't eat beef that much, just chicken and pork, but I have started serving vegetarian meals 2-3 days a week in preparation for this switch.
We eat different meals every week, with little to no repeats (there is always that dinner that is such a success that we include more often, but for the most part, we eat something new every meal). I would enjoy reading as many sites as you can throw at me.
Vegan sites are welcome, but for now, we aren't looking at going that hardcore. Thanks for the help.

I went Vegetarian about 2 years ago (while I was pregnant), I really felt amazing. Due to lack of iron and protein I have started eating chicken again regularly but no other meats. Make sure you're taking an Iron supplement and getting lots of protein. I began feeling extremely tired from the lack of Iron.

Post Punk Kitchen - theppk.com I like their snobby joes, roasted broccoli (the single best way to prepare broc imo) and onion rings.
fatfreevegan.com - I can't recommend their black bean sweet potato enchiladas more. We use regular medium salsa in place of the salsa verde and add shredded cheese on top for those who can have it. http://fatfreevegan.com/blog/2010/04/09/sweet-potato-black-bean-enchiladas/ I know they sound weird, but even my extremely carnivorous father who lives on ribs and ham sandwiches loves these and says he would even order them in a restaurant.
This is also a great site if you've over done it a bit and don't have a lot of calories or fat allotment left for dinner, since most of their recipes are low to no fat and low in cals.

I have been vegetarian for over 25 years and I love cooking. (man, that sounds like a line from a singles ad, but you get the picture)
101 Cookbooks is great and the recipes are easily modified (less oil, no cheese) if they are too high in fat or calories.

30 Bucks a week is a blog posted by a couple who try to keep their grocery bill under, well...30 bucks a week. They have some practical and creative ideas and use a lot of seasonal foods. They go through WordPress and there are actually a lot of veggie and vegan bloggers who have great ideas and tasty recipes that are easy for a home cook to follow.

I was a vegetarian for two years also. I respect whatever decision you would make for your own personal beliefs but the information in this book should be read, if only to gather a complete picture of what you could be getting yourself into. I would love to be able to afford buying local/organic meat. Its a great idea to offset the cost!
This writer comes accross as a radical and she is also a feminist but all of the information in the book checks out, she's done her research and wrote a book to educate other on her experience as a vegetarian. Its a great read and you can read the introductions for free at this link.

Those are vegan sites, so you can always "un-veganize" recipes by using cheese or butter etc. (although they usually don't need it!)
my favorite cookbooks are "How it all Vegan", "Skinny *****: Ultimate Everyday Cookbook", and my new all time favorite "Appetite for Reduction" by Isa Chandra Moskowitz(all of her cookbooks are amazing!)
I'd recommend that last one strongly, as the recipes are low cal/fat, nutritious, cheap and easy to make!

Thanks for the link. It was definitely an interesting read, but nothing that I haven't read or seen before.
I am not going the veggie route to save the planet from the evil food industry. I think that the authors points are valid and true. My idea is more simple than that, I am doing it as a way to focus. I need a stricter regimine to my diet. I eat way too many processed and refined foods. Vegetarianism is just a way for me to give up on the processed and refined, eat more whole foods, and eat a cleaner diet. It is also a budget cutter. We already eat a lot of beans, legumes, and nuts in my family, now we are just giving the no meat thing a go. I live in the Seattle area and local, organic produce is abundant during this time of year, so I thought it was the perfect time to start this family experiment. If it sticks, wonderful. If not, we are none the worse for the wear.
