I don't know if there is an official recipe somewhere for this, but I just came up with it. It is soo good though. I don't have the calorie count sorry.
Almond/Pork Rind Crusted Chicken - low carb
Almond/Pork Rind Crusted Chicken - low carb
- 2-3 pounds Skinless Chicken breast or thighs (use however much you want)
- 1-2 cans of almonds. (About 12 oz. I experimented with different flavored almonds from Blue Diamond, but honey roasted chipotle was my favorite)
- 2 tablespoons grated parmesan cheese
- 2 big bags of pork rinds (I like the spicy)
- 2-3 tablespoons curry powder
- 1 tablespoon garlic powder
- 2 eggs
- 1 cup almond milk or water
- Egg wash - Combine curry, garlic, eggs, and milk or water.
- Soak for 1-2 hours
- Ground almonds and pork rinds to a powder. *Don't blend too much or you'll make almond butter.
- Put mixture into a bowl and mix in parmesan cheese.
- Remove each piece of chicken from egg wash and let the egg drip off a little. Coat chicken with almond mixture then place on greased baking sheet. Bake at 425 for about 45 minutes.
