looking for low fat/low carb/high fiber meals for lunch/dinner besides salad

I need some easy, healthy meals that include veggies...one pot meals would be great. please help

    I make this at least once a week, it takes about 15 minutes total time including prep

    Thinly slice 2 to 3 cups zuchinni
    1/2 cup thinly sliced onion
    1 cup sliced mushrooms
    Put in pan with 1 T olive oil.
    A few grinds of pepper
    stir and sautee untill veggies are almost done
    Add in as much diced raw chicken as you want.
    Sautee long enough to cook the chicken thoroughly

    Meanwhile mix the sauce
    Sauce:
    1 tsp flour or cornstarch
    1 tsp brown sugar
    2 tsp soy sauce (more if you want)
    1 tsp rice vinegar (I use the seasoned type)
    1T water
    mix well and pour into the pan with the cooked veggies/chicken and stir for about 1 minute.
    Serve and enjoy

    thank you cblue315 ..I'm in a rut...eating the same stuff...any others are welcome...and I want pick anything you send apart. I will be appreciative and will give them a try. I love MFP but some of these posts tend to give some a open invitation to show how much they know and how little others know...it frustrates me...Encourage...Help each other..Thanks again!
