Gluten Free Chocolate Fudge Peanut Butter Mugcake Recipe

Hi all! Just wanted to share a little recipe I just had for my dessert.. I haven't been able to eat cake for a very long time but had an unquenchable craving for chocolate cake tonight :open_mouth:
Sooo I threw some things I had in the cupboard into a mug and microwaved and got a delicious gluten free, fudgy chocolate and peanut butter mugcake! :smiley:
It's low in fat and sugar for a cake and has 7g of protein.

Ingredients
10g Unsweetened Cocoa Powder
12g Oats
1/2 Tsp Vanilla Extract
1/4 Tsp Baking Powder
1/4 Tsp Baking Soda
2g Ground Almonds / Almond Flour
1 Tsp (5g) Peanut Butter
1 Tsp Liquid Sweetener of choice (I used Sweet Freedom)
1 Tbsp (6g) PB2 / Peanut Flour

Method
In a microwave safe mug, mix cocoa powder with a little water to create a smooth paste.
Stir in your sweetener and extract.
Fold in baking powder and soda, oats and ground almonds until well combined.
Make up your PB2 as usual with a little water to create a paste.
Gently swirl into chocolate cake mixture without mixing it in.
Microwave for approx. 1 to 2 minutes (the longer the more cake like, the less the more 'fudge' like consistency).

Optional: make a chocolate sauce to drizzle over by mixing 2 tsp cocoa powder with a little water or by melting some dark chocolate.

This makes one very chocolate fudgey cake that is also guilt free :)

    I'm even lazier and more impatient than that.

    10g cacao
    10g sweetener (i'm using truvia baking blend)
    3T liquid egg white

    Stir until combined. 30 second nuke, stir, 15-20 more seconds

    93 kcal
    11 carb
    1 fat
    7 protein
    0 sugar
    75 sodium

    If using truvia instead of truvia baking blend, take out 25 kcal and 5 carb
