Need help - wheat and dairy products

Hey everyone,
I did a food test the other day and found out that I have a low tolerance for wheat and can't have any soy or dairy products. (which really stings cause I love cheese like you wouldn't believe). I don't get sick when I eat wheat products, however instead of using it to provide energy, my body gets confused and stores it as fat. Goats milk seems to be find for me as well.
I'm trying to recondition myself on what I can eat but it's a bit of a mind bend and would love some help.
If you're in the same boat as me, what do you tend to eat throughout the day?

What kind of food test was it? I got a blood allergy test but I didn't know any better before then. Food intolerance tests are wrong 50-60% of the time, the best way to determine your tolerance to a food is to remove it for a couple weeks then reintroduce it back into your diet and see how it goes. The problem with them is that the test will show you are high in intolerance to foods you have frequently as your body is used to having them. The same thing happened with me and that shows how poor the test is.
Your body doesn't "get confused and store it as fat," your body only goes off total calories. If you are eating more calories than you burn then you will gain weight, regardless of the food source.0 -

I think you may be onto something that it gets stored. Sure, calories are energy packets that our body can use for energy, but everyone's body digests and metabolizes them differently, and if we aren't absorbing the energy from them because they are inflaming our intestine, or causing the intolerance in another way, chances are, it will get stored, digest slowly by "gut" bacteria, or get stored. And I think you just used the word "confused" for lack of better term.
I came upon this post because I think I have been having food allergies lately of the same foods, but I am not sure. I feel the effects, but unlike you, I haven't gotten tested.
Sometimes I get shortness of breath and really bloated feeling after eating certain things even if I don't eat a lot of it. It feels like anxiety but it's after I eat or drink particular things on occasion. Does anyone know if this is what a food allergy can do? I think it's mostly when I drink beer, wine or cheese but I haven't pinpointed exactly what it is yet. Anyone have food allergies? If so, what happens when you eat the food?
Wheat, cheese and soy are three very filling food groups that will be hard to do without. Also, I am a vegetarian which limits me even more, but I am considering allowing more meat if I really am allergic or have an intolerance to wheat and dairy, because the daily stomach aches are terrible and I am fed up and skimping on sleep because of them. I try to eat things like salads, roasted veggies (with goat cheese would be good), wine instead of beer, smoothies (I dont really eat these much buut theyre good), soups (mm homemade soups are the best!).0 -
corn tortillas(so many options here... fish tacos, enchiladas, etc.), and TJ's baked corn tortilla chips mm0
