Light Teriyaki Chicken Thighs

Here is a recipe I made yesterday.
I normally don't measure my ingredients, so measurements listed below are generally estimates. Feel free to adjust to your liking.

Serves 2-3 people.

Ingredients:
6x Chicken thighs with skin on
1/2 cup Soy sauce
1/2 cup Cooking wine (or Japanese Mirin)
1/4 cup Minced garlic
1 TBS cup Smoked paprika
Salt and Pepper to taste

Place all ingredients besides the thighs into a medium bowl and stir.
Place chicken thighs in and get marinade all over chicken.
Cover with plastic wrap and place in fridge overnight.
Preheat oven to 425F.
Place chicken thighs with skin on top, on a rack, sitting on top of a sheet pan.
Bake for about 25 minutes and flip chicken over.
Bake for another 10 minutes.
Remove chicken from oven and place on counter.
Allow the chicken to rest 10 minutes before serving.

Serve with Lemon or Lime slices.

    You had me at lime slices.
    I love mixing fresh lime juice into my soy sauce for marinades; that's the only step I'm changing. I'm definitely trying this!
