I made spaghetti squash tonight for the first time and i really like it. I just baked it at 350 but it took almost 2 hours. Can anyone recommend ways of cooking it? I think i will be eating it more often.

I make it quite frequently. My trick is to stab a few big holes in it (make sure they go all the way to the middle) so that it can vent and microwave it for 10 or so minutes. Then it's soft enough to cut in half and I'll bake it for another 30-40 minutes. I find that a big spaghetti squash will make 3-4 servings so I'll do it one night during the week and put it in a container in the fridge. I like it with a bit of brown sugar and I can't believe it's not butter. I've heard people put pasta sauce on it since it's like pasta.0

I do mine straight in the microwave. Poke holes in it, bake in microwave for 5 minutes, cut open and put face down in pan, bake another 10 minutes. Check for doneness.0

2 hours??? WOW!! I cook it at 400 I think, and it takes 45 min.
I cut it in half, scrape out all the seeds, and coat it with olive oil, garlic powder, cayenne pepper, cumin, and kosher salt. When it is done I use a fork to separate the "noodles" then I coat them with Extra virgin olive oil, butter, chopped spinach, and parmesan cheese. I also serve it with roasted chicken.
Good luck!0 -

That sounds good!
I cut it in half and cook it upside down in a baking dish with sides, round cake pan, something like that with some water in the bottom so it helps steam it. That's how I cook acorn squash too.0 -
I cook mine upside down too, I put it on parchment paper. I do butternut squash the exact same way, but when it is finished I add cream and butter and serve like potatoes. Acorn squash I cut into quarters cook flesh side up. I put chopped up uncooked bacon, franks hot sauce, and parmesan cheese. I add a little water to the pan to keep from drying out. bakes at 375 for about 35-45 min.0

I actually have one sitting on my counter I think I'll make for dinner tomorrow. If I do it as a side dish with parmesan, can anybody recommend a main dish (protein) to go with it? Maybe pork chops...?0
