breakfast crockpot recipes

tomorrow night im throwing stuff into a crockpot for a breakfast casserole for Christmas morning. im looking on pinterest to find some good recipes so i can hit up the store today. has anyone PERSONALLY tried any breakfast crockpot recipes that turned out good ? the only 2 im finding are a cinnamon roll one, and one i have made before, that i wasnt too impressed with (maybe i just cooked it too high and or too long) anyone have anything ? thanks

    The only think I am really into in terms using a crock pot for breakfast is steel cut oats. Otherwise, I can't say as I have been impressed.

    That said, my mother does a casserole called Breakfast Before that is egg and sausage based that she'll prep the night before and then pop in the oven.

    Ingredients:
    1 bag 26 oz. frozen hash browns
    12 eggs
    1 cup milk
    1 tablespoon ground mustard
    1 16 oz. roll sausage
    maple, sage or regular sausage.
    Salt and pepper
    16 oz. bag shredded cheddar cheese

    Directions:
    1. Spray crock pot and evenly spread hash browns at the bottom.
    2. Crack 12 eggs in a large bowl.
    3. Mix well (and slowly) using a whisk.
    4. Add the milk.
    5. Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
    6. Add plenty of salt....
    ...and lots of fresh pepper. Mix well and set aside.
    7. Cook the sausage on high heat, drain and set aside.

    8. Add sausage on top of hash browns.
    9. Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
    10. Mix it up well. Or good, depending on where you're from.
    11. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
    12. Turn the crock pot on low for 6-8 hours.

    The reason I said "kind of" is because I followed the cooking instructions but the add-ins were different. I roast my vegetables (zucchini, yellow squash, peppers, cauliflower, broccoli...) then add in raw baby spinach.

    That sounds good... but can you leave it on for more than 8 hours?

    Great question! I actually shared this recipe on Facebook. I was going to make waffle omelets, but I think I'll do this instead.

    Never made one in the crock pot, but all the breakfast casserole recipes I've tried in the past were to be prepared the night before. So essentially on Christmas morning you just take it out of the fridge and put it in the oven. Why the need to use a crock pot?

    i have already tried the one with the sausage and eggs and hashbrowns, and i wasnt too impressed with it..i followed the recipe exactly, and left it overnight on low, and the next morning, the sides were burned, and the eggs weren't fluffy and yummy..they were overcooked..nobody in my house wanted to eat it..i was disappointed with it

    I was wondering this exact thing. I always just pop mine in the oven and it cooks while opening gifts or showering and getting ready for work. I make breakfast casserole regularly and haven't tried the crock pot style mostly because I don't see the need to use 6-8 hours of electricity for it.

    Also breakfast casserole doesn't need a recipe, toss whatever you like for breakfast into a baking dish and bake. I use potatoes for the base then add all my veggies, cooked meats, cheese and cover with eggs or egg beaters. Kind of like having an omelet and homefries all in one dish.

    I bake french toast like this as well, mix up the batter, place bread in baking dish, pour batter over and soak overnight then bake in the morning. I do personally find I like the bread cut up before hand instead of whole slices.

    I use turkey sausage and only 1/2 as bag of potatoes and 6 eggs. .. Potatoes add a lot of carbohydrates.
