HELP! RECIPES NEEDED :)

I am a mom and a nursing student. I honestly need SIMPLE lunch and dinner recipes.
Any ideas?

  • My favorite is Greek pita pockets. Instructions below are for two servings.

    1. Add lemon juice, lemon pepper, and thyme to 1 serving of plain Greek yogurt to taste.
    2. Dice 1/2 an onion and cook in pan over medium heat with 1 TBSP minced garlic and olive oil until onion is translucent.
    3. Add the following to the pan: 1/2 pound ground beef, oregano, basil, parsley, lemon pepper, and lemon juice. (I use dried herbs, typically around 1 TBSP each.)
    4. Break beef down into crumbles.
    5. Meanwhile, heat oven to 350 and throw in 2-3 pitas while oven preheats.
    6. Quarter a large handful of cherry tomatoes and add to pan once meat is browned. You may need to smash the tomatoes down a bit in the pan to release the juices.
    7. Once pan mixture has soaked in all liquid (approximately five min.), turn off the stove.
    8. Remove pitas from oven, top with meat and yogurt mixtures. Top with Feta cheese, if desired.

    It usually takes around 15 min. I tend to serve with a side salad, pita chips, and hummus.

    Personally I have a couple of mainstays that I make at the weekend and then grab a Tupperware for lunch at work

    I make a huge vegetable stew either chilli or Mediterranean with onion, celery, carrot, chopped butternut squash, aubergine (eggplant), courgettes (zucchini), red pepper, mushrooms, 2 tins chopped tomatoes (400g each), salt and peppe

    The spices I add are either a chilli version so garlic and bay leaf, thyme, chilli, lots of cumin, hot paprika or a Mediterranean flavour so garlic and bay leaf, basil, thyme, oregano, rosemary

    I make boiled rice and keep that in the fridge too so I can take 100 to 150g

    Oh and a Tupperware of grated mature cheese

    Or a butternut squash risotto

    Or a chunky minestrone soup with pasta

    In hot weather always a big chopped salad with olives and caper berries to eat with fresh tuna or cottage cheese or ham

    If I have 2 of these I'm the fridge in huge tupperwares I'm set for lunches for the week and dinners can be ad hoc
