eggplant?

Any vegan recipes for eggplant I only know how to roast it what are your favorite ways to make it?

    Italian Eggplant Bake

    1 eggplant
    1 zucchini
    1 yellow squash
    1 onion
    1 can sodium free diced tomatoes
    1/2 tsp basil
    1/2 tsp oregano

    Peel and slice the eggplant in 1/2 inch pieces.

    Dice the squash, zucchini, onion.

    In a glass baking dish, pour a little of the tomatoes and layer the pieces of eggplant.

    Place the rest of the veggies on top of the eggplant. Pour the rest of the tomatoes over this. Add basil and oregano.

    Put in oven at 400 degrees for 1 hour.

    Grilled Tomatoes and Eggplant

    1 eggplant, trimmed and cut crosswise into one-half inch slices
    1 lb tomatoes, sliced
    1/4 tsp black pepper
    2 Tbsp chopped parsley
    1 Tbsp olive oil
    1 large clove garlic, pressed

    Coat both sides of eggplant and tomato slices with olive oil-flavored nonfat cooking spray.
    Sprinkle with fresh black pepper to taste.
    Grill eggplant slices until brown and tomato halves are charred.
    Combine parsley, olive oil, and garlic in a small bowl; pour over eggplant and tomatoes.

    Serving size : Makes approximately 4 servings

    Roasted Eggplant with Tomatoes

    1 lg eggplant
    4 sm tomatoes
    1 lg onion
    1 Tbsp minced garlic
    1 Tbsp ground coriander
    1 tsp dried thyme
    1 tsp pepper
    1 c water
    1 tsp chicken bouillon
    1/2 c red wine vinegar

    Preheat oven to 500 degrees.

    Cut the eggplant into 1-inch cubes

    Cut tomatoes into eighths; seed and core. Cut onion into eights; separate layers.

    Place all the prepared vegetables in a large mixing bowl.

    Sprinkle garlic, coriander, thyme and pepper on top. Gently toss.

    Pour water, chicken bouillon and red wine vinegar over the vegetable mixture. Toss gently until completely coated and well mixed.

    Spoon vegetables into shallow 9x13-inch pan.

    Roast for 1 hour, stirring gently every 20 minutes.

    Eggplant Tomato Sautee

    INGREDIENTS
    • 2 roasted red bell peppers
    • 1 onion, diced
    • 1 can stewed tomatoes
    • 1 eggplant
    • 4 cloves crushed garlic
    • 2 tablespoons tomato paste
    • 1/4 teaspoon ground black pepper

    DIRECTIONS
    1. Cut the eggplant into small strips and dice onion. Water-saute until eggplant and onion begins to soften, about 6 to 8 minutes.

    2. Once the eggplant is soft, add garlic.

    3. Cut peppers into small strips and add to eggplant. Add stewed tomatoes. Add tomato paste and pepper. Bring to boil, reduce heat and simmer for 30 minutes.

    Vegetarian Stuffed Eggplant

    1 large eggplant
    1 onion
    1 tsp garlic (refrigerated)
    1 zucchini
    1 pkg mushrooms, sliced
    1 can no-salt tomatoes
    ¼ tsp black pepper

    Cut eggplant in half, lengthwise and microwave w/ a little water on bottom of lidded casserole on high about 5 mins.

    Saute onions, garlic, mushrooms, zucchini, black pepper.

    Add diced tomatoes and simmer 10 mins.

    Scrape out the inside of the eggplant. Cut into chunks.

    Add the rest of the veggies to the eggplant.

    Serve.

    Roasted eggplant and tomato soup! You can omit the cream, and use vegetable stock. It's really good.

    I make something called eggplant relish, like bobaganoosh. Peel then cube eggplant into 1/2 inch cubes, chop 1/2 white onion, 1 tbsp dried or fresh parsley, 1 tbsp minced garlic from jar (less if fresh), 5-10 minced pickled jalapeno slices based on preference, 1 tsp. Salt. If at end not salty enough add more. Cook over med-low heat until all is tender. If it dries out at any point add a little water. Serve with chips or crackers. The calories are low for the dip, but the dipping tool will have cals.

    I take eggplant dip it in egg white then seasoned Panko bread crumbs sprayed with olive oil spray and bake 370 degree oven till done love them!
