Looking for healthy recipe's with an ethnic twist....

I love food. I love flavors! I was wondering if anyone out there had and good "ethnic" recipes that were healthy as well. I love to eat Thai food and Indian food and would love to know if you guys have any healthy Thai or Indian recipes that I can try??

    Over on my blog (fatdormouse.blogspot.com) there are some recipes with a slightly ethnic twist (though not very!) I'll try to remember to look out some others for you.

    I chop up chicken into bite sized pieces, mix in tumerick and a little salt and stirfry. I usually serve this with roasted cauliflower.

    Any curry recipe that does not involve coconut milk is probably a good choice. For additional calorie savings, stick to cauliflower instead of rice, try substituting spaghetti squash in place of noodles. This works great for Pad Thai.

    I love flavorful food too!!

    You can use Lite coconut milk to save fat and calories, and dried chickpeas that have soaked in water overnight to reduce the sodium. The calorie count includes the rice.

    Coconut Chicken Curry

    Serves 4

    2 boneless skinless chicken breasts, cut into large chunks
    1/2 can coconut milk (you can use Lite if desired)
    1 sweet potato, peeled and cubed
    1/2 can chickpeas, drained and rinsed
    2 TB Patak's Mild Curry Paste
    1 cup water
    1 cup Basmati rice, cooked

    In a slow cooker, combine the coconut milk, water and curry paste. Stir until everything is combined. Add the chicken, sweet potato and chickpeas. Cook on low 4-6 hours. Serve with rice.

    Notes: You could add some grated ginger, cinnamon, cardamon, garlic, and onions to this as well. Fresh chopped cilantro for a garnish would work well. If you want this spicy, add some cayenne pepper or use hot curry paste. You can make this vegetarian by omitting the chicken and adding cauliflower. You could experiment with adding rice or cous cous to the slow cooker about an hour before it is done cooking.

    I love Indian food! I posted this in a thread recently:

    Lentil Dahl

    - 1/2 cup uncooked red lentils
    - 1 onion chopped
    - 2 cloves garlic crushed
    - oil spray
    - 2 cups vegetable stock
    - 1 tbsp curry power
    - 3/4 tsp ground cumin
    - 3/4 tsp ground paprika
    - 1/2 ground turmeric
    - fresh coriander/cilantro (optional

    1) Fry onion and garlic in oil until cooked
    2) Add curry powder, cumin, paprika and turmeric- cook for further 2 minutes
    3) Add stock and lentils and bring to boil
    4) Simmer for 35-45 minutes until liquid absorbed and add fresh coriander

    2 portions but easily doubled/halved. Each portion is around 200 cals, 11g protein, 8g fiber.

    I usually have it over rice with a dollop of fat free Greek yogurt, but it's also delicious over roasted eggplant (cut in half and bake face down for 40 mins) or just a bed of lettucs/spinach.
