try oh she glows and PPK websites. they have some great recipes.
I prefer the first website as its updated a couple of times a week with new recipes.

Some recipes I made from Oh She Glows:
Just made the 5 minute power oatmeal bowl to take for work tmw
    Quinoa cakes
    Green Taco Wraps
    Apple Oat Squares

    they were good and easy!

I bring a green smoothie (2 cups greens, 1 c almond milk, 1 c h20, a banana, and strawberries or mango with a tbsp of chia seeds - or some variation) in a one quart mason jar to work for bfast, a piece of fruit, an ounce of nuts and a can of amy's lentil or lentil vegetable soup to heat up for lunch. That's my go to food for a 13 hr shift. I'll eat a light dinner when i get home at 745 pm. Also, steel cut oats, cut up strawberries, milk of choice, sprinkled with chia seeds is nice and looks pretty too.

I'm not vegan, but I make a veg wrap for lunch at work (300'ish cals). My diary is open.

I prep my breaks & lunches on Sunday, so I'll make a big batch of oatmeal with: steelcut oats, white chia seeds, water & cashew milk for the base, & cinnamon. You can add whatever sweeteners you want, but for me the cinnamon does the trick. Tofu scramble is also another good prep option :)

You could do overnight oats, smoothies, banana + PB + hemp seeds (my fav), Ezekiel toast with whatever you want on it (PB, earth balance (vegan butter) + jelly, hummus + avocado)

For lunch, I'll prep baked tofu cubes (love eating them cold with hot sauce), garlic tempeh strips (love dipping them into BBQ sauce), baked garlic brussel sprouts, navy beans, black beans, broccoli with lemon, red lentil curry & cauliflower florets or cauliflower rice.
