Gluten Intolerant Student... help

I started uni last September and since then I've gone from 9st 10 to 10st 5. I really want to get back to my old weight in the healthiest way possible. Cost is a factor as well as being unable to eat Gluten. Any suggestions for healthy yet affordable gluten free meals?

It's easy to gain weight if you're not used to a gluten free diet, as gluten free products are definitely not always low cal!
My typical day looks like 1.5 servings of Cinnamon Chex with 1 cup skim milk. Cereal is weighed on my food scale every single day, as you can't always tell how many grams especially towards the end of the box. I bought my food scale for $10 at a box store btw.
A lot of times I will just have a serving of 2% cottage cheese for lunch, 110 calories for 125g. It also makes a great snack if you're hungry and don't have much room left for calories.
For supper I try to really cut back on my starch servings, so if we're having rice or pasta, I try to restrict myself to a third of a serving as they are always so so high in calories. If you have access to a crockpot you can make some easy meals in there.0 -
Eggs! One of my favorite meals is greens, sauteed in coconut oil, scrambled in with some eggs. Cheap and delicious.0

I've done exactly the same in my first year except I've gone from about 8st 10 to 9st 8, which doesn't look good on a 5'2 frame! I don't eat Gluten either, and although I'll admit to probably spending a lot more than most students (maximum loan, grant, scholarship and part time job), I manage fairly inexpensively. My main thing is a (GF) protein shake for breakfast, as much soup as I can eat at lunch, meat and frozen steamed vegetables for dinner, and another protein shake if I'm desperate for food. That's what i've logged for my food tomorrow if you'd like to take a look, and it's around 1000 calories. Don't buy bread or gluten free snacks and cakes. They're expensive and you don't need them! For salads and things, rice or chickpeas or quinoa is a good carb option, or just add loads of veg. Frozen green beans and roasted vegetables are a total lifesaver, and reduce waste.0

My work friend is celiac but in uk you can get some gf staples like bread and pasta free on prescription! She tends to stick with rice and potatoes for carbs as the gf things are high in sugar and cals!
Her lunch today was smoked haddock and a poached egg and a big salad.
Rice noodles are ok and fairly cheap (here anyway)

I've recently gone GF, was having achy joints and tired all the time. Since going GF I feel great and the weight loss from doing high protein diet has been incredible. I'm a trained chef so I'm having fun being creative with recipes. I'd love to share my culinary experience to those in need. Got keep the meals interesting!0
